|The owners are a married couple, Liz Silva and Andy Hooker (no jokes please, he’s heard them all!). Liz is from Cowbridge and, therefore, knows the local area and community well. Andy, is a chef, and has been involved in running and owning successful community pubs for 20 years. Their keenness and enthusiasm to restore the Bush to its former glory is plain to see.|
The answer to the question that everyone asks – when is it opening? – is that the current plan is they will be handed the keys on Monday, 21 June. And they hope to open about a week later. But please bear in mind that there is a lot for them to organise, so these dates should be treated as tentative. They will be living at the Bush and appreciate the importance of community.
There are no major structural changes to the building, but central heating has been installed and the restaurant now has a vaulted ceiling. The theme will be rustic, with none of the uniformity of tables of the previous tenancy.
Andy has a reputation for good quality food, specialising in grills, fish and pastries – especially wellingtons (not the rubber sort) and pies, including game and pheasant as well as the favourites. He hopes to source as much as the produce locally as possible.
Finally, most importantly, Bass will be available!
